melted manchego with dates and rosemary

ingredients
200g Manchego cheese
4 dates
4 slices of bread (sourdough bloomer recommended)
1 stem rosémary (dried if no access to fresh)
Olive oil
method
Preheat oven to 200°C
Slice your bread
Deseed your dates and chop into 1cm pieces
Slice manchego cheese into thick triangles
Place toast onto a lined baking tray, drizzle with oil, sprinkle a pinch of salt and rosémary
Place 2 manchego slices onto each piece of toast and bake for 5 minutes
Then add chopped dates and bake for a further 5-7 minutes until the manchego has melted and gotten a bit of colour
pan con tomate

ingredients
3 large tomatoes
1 garlic clove
2 tsp olive oil
1 tsp salt
4 slices of bread (any bread of choice, sourdough bloomer or ciabatta recommended)
Chives
method
Cut 4 slices of bread and place in toaster
Chop chives finely
Get your tomatoes and cut them in half
Place a standing box grater over a bowl and using the large grating holes, place your palms on the skin side and grate the tomato faces until you are left with just the skin.
Add two teaspoons of good quality olive oil and 1 tsp of salt to the grated tomatoes and set aside
Toast your bread
Remove the skin of 1 garlic clove
Once bread is toasted, rub the garlic clove over the toast, use half a clove per 2 slices
Drizzle some olive oil over the garlicky toasted bread
Spoon on a generous amount of the tomato mixture onto the bread and sprinkle with your chopped chives
pimiento de padron

ingredients
1 pack pimiento de padrón
1tsp oil
1tsp salt
method
Place pan on high heat, wait till the pan is very hot (turn your fan on / open your windows - things are about to get a bit smoky)
Add the pimiento de padrón to the hot pan, they should blister immediately
Take off the heat and swivel around
Once cooled slightly, add the oil and salt
Place back on heat for 7 mins till blistered and cooked
Take off heat and enjoy them immediately
Serve with a chilled glass of savōr vin de españa.
